I think you might have some of the usual materials like yucca, sotol, and mulefat. Considering South Texas is relatively close to Arizona you could try those things. I think you might also have...

We've got Yucca capensis, hackberry, guaje, esperanza, guava, mesquite, and Texas ebony in the back yard.

give the yucca a try first (you should be able to get success with yucca/yucca). Definitely dont waste your time with mesquite, that stuff is like cement. Youll just polish the wood rather than burn...
